3 delicious Thanksgiving Dinner Leftover Ideas that your whole family will love!

Turkey Fried Rice

Leftover turkey, fluffy rice, scrambled eggs, vegetables + Asian seasonings make for a quick + easy weeknight dish!

Total Time: 15 minutes | Yields: 4-6 servings

INGREDIENTS

  • ½ tablespoon vegetable oil

  • ½ cup onions, finely chopped

  • 1 teaspoon garlic, minced

  • 1 small jalapeño pepper, sliced (optional for a spicy kick)

  • 1 + ½ cups leftover cooked turkey, shredded or cubed

  • 2 eggs

  • 3 cups white rice, cooked

  • 1 tablespoon soy sauce

  • ½ tablespoon sesame oil

  • 1 teaspoon vegetable stock powder

  • 1 teaspoon white pepper

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • 1 cup carrots and peas vegetable mix, canned or frozen

  • ½ tablespoon green onions, finely chopped

  • 1 teaspoon white sesame seeds (for garnish)

INSTRUCTIONS

  1. Heat oil in a large skillet over medium high heat for 2 mins until hot. Add onions, garlic + sauté for 2 minutes until fragrant. Stir in jalapeño

  2. Add turkey + stir to combine, about 1 minute. Move turkey mixture to one side of the skillet + add eggs to the empty space in the skillet. Stir the eggs until scrambled + cooked through, yet still tender, about 1 minute. (The eggs should be springy and bright in color, not too dry at this stage). Stir to combine all ingredients together

  3. Add cooked rice + all seasoning including soy sauce, sesame oil, vegetable stock powder, white pepper, salt + black pepper. Stir well to combine, about 2 minutes. If the rice is not soft enough, add up to ¼ cup of water to soften it

  4. Add carrots + peas, stir fry for 2 minutes while evenly mixing + distributing the ingredients. Then, stir in green onions

Serve hot on a plate + sprinkle sesame seeds on top. Enjoy!

TURKEY POTATO CHOWDER

Leftover turkey potato chowder is such a creamy, savory + delicious soup made with both leftover turkey and mashed potatoes, it's the perfect way to transform holiday leftovers into something new and delicious in under 30 minutes!

Total Time: 35 minutes | Yields: 4-6 servings

INGREDIENTS

  • 2 tablespoons butter

  • ½ small onion, diced

  • 1 clove garlic, minced

  • 2 tablespoons all-purpose flour

  • 3 cups chicken stock

  • 1 teaspoon Italian seasoning

  • 3 cups leftover mashed potatoes; any leftover potatoes: mashed, cut or scalloped

  • 2-3 cups cooked turkey, shredded or cubed

  • 1 cup half + half cream; whole milk or heavy cream

  • ½ cup corn, frozen or canned, rinsed (may also add in your favorite vegetables such as carrots, celery, or peas)

  • salt and pepper (to taste)

  • shredded or parmesan cheese, (optional, for topping)

  • parsley, chopped (optional, for topping)

  • seasoning - Italian seasoning, salt + pepper

  • toppings - feel free to add your favorite toppings such as cheddar cheese, green onions, or corn kernels

    INSTRUCTIONS

    1. In a large pot or dutch oven, melt butter over medium-high heat, until it starts to bubble, about 1 minute. Add onion + garlic and sauté until they start to brown, about 3-4 minutes

    2. Add flour + mix well until evenly combined with the onion mixture + continue to cook for another minute. Pour in stock + Italian seasoning, mix well. Bring the mixture to a simmer, about 3-4 minutes

    3. Add in mashed potatoes + stir until all the potatoes have broken up. Let the soup simmer over medium heat for 8-10 minutes until thickened, stirring occasionally

    4. Add turkey + half and half cream. Cook until heated through, about 3-5 minutes. Stir in corn + season with salt and pepper to taste

    5. Ladle into bowls, top with shredded cheddar cheese + green onions, if desired

Buffalo Turkey Wraps

Quick + easy turkey wraps with homemade buffalo sauce are flavorful, spicy + delicious for any time of day!

Total Time: 15 minutes | Yield: 4 wraps

INGREDIENTS

  • 2 tablespoons olive oil

  • ½ cup hot sauce

  • ½ teaspoon garlic powder

  • 1 teaspoon white vinegar

  • 2 tablespoons mayonnaise or ranch dressing

  • ½ pound cooked turkey strips (about 1 cup)

  • 4 large flour tortilla wraps

  • 2 cups romaine lettuce, chopped

  • 1 cup cheddar cheese, shredded

INSTRUCTIONS

  1. In a medium mixing bowl, combine olive oil, hot sauce, garlic powder, vinegar + mayonnaise. Stir well until smooth. Add the cooked turkey strips + toss well to coat

  2. In the center of each tortilla, add ½ cup of lettuce, ¼ cup buffalo turkey strips, ¼ cup cheddar cheese + a drizzle of extra buffalo sauce, if desired. Make sure to leave about an inch of room on the edges

  3. Fold the two sides of the tortilla inwards over the filling. Then pull the bottom end all the way over + under the ingredients, tucking as you roll the wrap. Make sure all corners are tightly sealed. Once wrapped, you can hold the wraps together using toothpicks or wrap them in aluminum foil
